Ethyl 2-methylbutyrate is the ethyl ester of 2-methylbutyric acid. It is one of the most impactful fruity esters: a small dose gives a fresh green-apple and juicy berry note. Flavorists use it in apple, morango, uva, framboesa, mango and tropical fruit flavors for beverages, candy and dairy.
