Propionic acid (propanoic acid) inhibits mold and some bacteria, so it is used directly as a preservative in grain and feed and, through its calcium and sodium salts, in bread and other foods. It is also an esterification raw material for propionate esters used in flavors and solvents, an intermediate for fungicides and pharmaceuticals, and a raw material for plasticizers.
