Introduction:

Isopropyl Palmitate (IPP) is an ester made from palmitic acid and isopropanol. It is derived from palm oil, making it a cruelty-free alternative to many other common ingredients. 

Some nicknames for Isopropyl Palmitate are Vitamin K and Lipid II.  It is made by adding alcohol with fatty acids that yield esters like IPP.

A chemical reaction occurs in these processes that produce water, alcohol, and either glycerol or dodecanal as byproducts depending on the fat used during production.

This product has several properties, including antimicrobial activity, antioxidant activity due to its emulsion forming property because waxes create a protective barrier against oxidation, solvent extracting capability for lipids, and others such as UV absorbing properties.

Applications:

The two main properties of IPP are that it can be used as an emollient and thickening agent in cosmetics because of the natural moisturizing agent found in the product.

It is used as a fatty and plasticizer. It can be used in the food industry as a substitute for fats. This means that it can use it in foods to regulate texture, flavor, stability, and shelf life.

However, due to the use of high heat during processing, the resultant IPP molecules cannot retain any trans-fat properties found in animal fats or vegetable oils. So while they act like saturated fats in food applications, they are still considered "healthy."

The most common reason for its addition would be when creating fried meals such as chicken nuggets due to their ability to maintain flexibility at high temperatures without becoming hard or brittle.
