Ethyl propionate is the ethyl ester of propionic acid. In flavors it gives fruity, rum-like and pineapple notes for apple, banana, plum, pineapple, butter and liquor flavors, and it is used in high-grade cosmetic fragrances. As a fast-evaporating solvent it dissolves cellulose esters and ethers and many natural and synthetic resins.
